Carrot Salad Recipe: Russian and Korean Carrot Salad (Vegetarian Recipe)

This is a very easy to use carrot salad, you can throw it together at the last minute and then join the dinner party. Or if you find yourself having too many people in a meal and need more food, this can improve your choice. Carrots are cheap, nutritious, and even children like them. This is a vegan recipe for Russian-Korea carrot salad.

There is an interesting story behind this recipe. A few years ago, our family traveled together. My brothers and sisters, my parents and my mother's two sisters traveled to Scandinavia around the world to Norway, Sweden and Finland.

One of the stops was in Russia, where we made personal trips, including lunch in a Russian family house. I know that the best food is usually home cooking, so I am excited to look forward to this part of the trip.

The woman and her son live in their small apartment. She gave us a delicious borscht, blini with caviar, and other things I forgot. She also concentrated on my special borscht, no beef soup, and carrot salad without animal ingredients, so I was full.

I like these two dishes, the salad is very unusual, I asked if I can eat the recipe. She took me into her kitchen and dug a box from the trash. She used to mix! More interestingly, the mix comes from South Korea. I recognized Korean on the label.

I was able to write down the ingredients and go home to develop a reasonable salad fax. It is always very popular in potlucks and mixes well with any type of food. This is the recipe:

Russian and Korean carrot salad

6 cups of ground carrots

1/4 teaspoon of chili

1 tablespoon sugar

1/2 teaspoon salt

1 tbsp rice vinegar

3 tablespoons oil

Mix all the ingredients together and chill.

I tried to touch the carrot with my hand... once. My arm hurts so badly that I regret it and never did it again. Instead, I choose a food processor. The carrots are cut into pieces about 3 inches long enough to fit into the feeder of the food processor.

Another tip: I never peel carrots. I don't understand why I am doing this. I buy organic washing them. Providing more fiber and nutrition to those who eat it; less work for me. Oh, I am very practical!
