I have seen different types of restaurant staff training skills. Some restaurants send new employees to their company training schools; others hire experienced staff who think they already know how to work. I believe that all new employees should receive quality training regardless of previous experience.
Every character in the restaurant is important to the success of the restaurant!
Management must be able to work in every position. Their understanding of each job is crucial. Managers must enter other roles to maintain customer service. Some reasons may be if there are labels, or sales are higher than expected.
If people tell you that managing a restaurant is easy, then it is wrong. In fact, this is the most difficult location in the restaurant. Operating a restaurant is full of challenges; management needs to be able to conduct multi-tasking, mentoring and follow-up in this direction. Managers must be able to retain a large amount of information and make quick decisions and be ready to enter any position.
Managers were not born to run restaurants; they developed to that position. The same is true of other employees. Train managers and then train trainers. Management will supervise trainers while training other employees.
The most effective restaurant training skills are:
- Exhibition - Execution - Evaluation: The trainer shows the staff how to complete the task. The trainer then observes the trainees who actually complete the mission. Once completed, they review the tasks together and the trainer provides feedback to the new employees. Show-Do-Review technology is especially effective in learning recipes, kitchen duties, cleaning tasks or service tasks.
- Memory game: Once new employees have some knowledge of their new job, the trainer will influence the employee and help the new employee remember the different key parts of the job. The trainer will ask questions to the trainee on a regular basis. If the trainee does not answer the question correctly, the trainer will provide the answer. The trainer will repeat the question during the day or night until the trainee answers correctly. The purpose of this exercise is to let the staff retain the information. Memory games can be used to remember important food times and temperatures, menu and recipe knowledge, service steps, and even manager duties.
- cosplay: Role playing is one of the most effective training techniques for creating top performers. Existing employees and new employees experience real-life situations and "learn by doing". Trainees will experience "real life" situations in a simulated and controlled environment. This technology allows the trainer to assess the strengths and areas of the trainee for improvement. It also helps to develop an action plan so that trainees can overcome the obstacles to success. "Practice makes perfect." This technology allows employees to see different perspectives, build confidence and develop good habits. The trainer will observe the role play and correct the staff on a regular basis to ensure they are on the right path. For service personnel and managers, role-playing is a great skill to learn the correct way to handle customer issues or complaints, how to handle forms and service steps.
- shadow: The trainee influences the trainer, and the trainer shows the trainee the correct procedure for completing the assigned task. The trainer should refer to the task to ask open questions. Once the trainee is more comfortable, the trainer will influence the employee. Communication between staff is critical to developing students. Shadows can be used in almost any character, especially on the first and last days of training.
Once the trainer evaluates the staff and determines that the employee has mastered the position, the person can work independently.
Management should observe or participate in the training process to ensure that employees receive quality training. General Manager / Owner Supervisor Manager. The general manager/owner may have the final decision on whether the new employee is prepared to work alone.
Use any available tools to help achieve your training goals. Use feedback or an assessment form to help track the quality of the training during the training process. Documenting the progress of the training and reviewing it with the staff will help employees understand your expectations. It also provides you with a written record of specific employee training.
