The potato became famous in Europe in the seventeenth century because it is considered a source of food that can save humanity during the famine.

Although our economy is unstable, we are certainly not a country on the verge of hunger. Instead, we are overweight. Unfortunately, many healthy foods are more expensive than junk food.

However, this ancient potato is a healthy staple food that is inexpensive, can be purchased in large quantities, fills you up, and provides the nutrients that everyone needs.

A bag of 5 pound potatoes costs an average of $5 or less. Each potato can provide potassium, iron, calcium, vitamin C and folic acid. Although potatoes are often not too tasty because they are too starchy, eating them will not make you fat unless they are suffocated with butter, sour cream or creamy sauce. French fries

Ingredients

6-8 medium auburn potatoes, steamed until freshly cooked

2 tablespoons olive oil

1⁄2 teaspoon. salt

1⁄2 teaspoon. Basil [optional]

Preheat the oven to 425F. Cut the potatoes into quarters and cut into 1" pieces. Put the potatoes in a bowl. Serve with olive oil, salt and chili powder [basil, if needed], mix well and spread. Place on a baking sheet and bake. To crispy brown, about 20 minutes. Serve immediately. They are the perfect low-fat diet for French fries. Service 8.

Garlic potatoes

Ingredients

4 big potatoes

1⁄4 cup of fresh lemon juice

1⁄4 cup of warm water

1 teaspoon oregano

3 cloves of garlic, chopped

1 tablespoon sesame sauce

1⁄4 teaspoon. chili

Scrub the potatoes and dry them. Cut into 1⁄2" strips. Put in a 9"x11" baking dish and spray a non-stick spray. Stir the even sesame sauce in water. Add the rest of the seasoning and garlic. Pour over the potatoes, then turn over and spread around. 400F, Uncovered, 1 hour or until tender. [Place stainless steel biscuit slices under the casserole to prevent burning, if needed]. Stir occasionally. Serve heat. Supply 4.

Ingredients

2 cups of warm mashed potatoes

3⁄4 cup whole wheat pastry flour

1⁄2 cup soy milk

1⁄2 teaspoon. salt

2 teaspoons of Ramford baking powder or EnerG baking powder

Stir all ingredients together to make a soft batter. Preheat the oven to 400 °F. Spray the baking tray with a non-stick cooking spray. Make pancakes by kneading the batter onto the baking sheet. Bake to brown at the bottom for about 10 minutes. Rotate and bake for about 10 minutes. Remove and place on a plate and keep warm in a cold box until ready to serve. [Latkes can also be baked on a non-stick pan.] served with applesauce and tofu sour cream or regular soy yogurt. Make 12 pancakes.
